Not the most appetizing, but yummy and super filling! I forgot the cherry tomatoes, however.

The original south beach diet allowed for dairy. Not sure about the online version, which is basically a low carb diet. Where are you gathering your information? Good luck to you, regardless!
-
South Beach is not (or was not) a variation of atkins. Atkins is not eat all the bacon and cheese you want.

Evidence? (Other than his post death edema)

The atkins.com website shows everything you need to know. You just have to look around a bit.

Many women experience ovarian failure a few years after having their uterus removed. You're probably in peri-menopause, but should check in with a doc. Mine began with vertigo, more migraines, etc. And night sweats 1 week a month. Then the hot flashes began... it was a multi year process for me.

A reminder about the low carb group on here: https://community.myfitnesspal.com/en/group/394-low-carber-daily-forum

Atkins IS focused on whole foods. Keto is like Atkins early phases.
-
Atkins doesn't mean "no more carbs", not during the weight loss phase, and certainly not during lifetime maintenance.

It's hard to know what's diet, and what's impending menopause. Crushing fatigue was TOUGH for me as I was about to slide through menopause. Perhaps it's a combination of the two?

I think this is going on my "refreshing summer snacks" list. And I think I'll follow your lead and use sour cream.

I loathe pintrest. Not sure why. I always have.
-
I did great: shrimp, meatballs, bok choy. Hubs enjoyed all his pork buns and dumplings!
-
Sounds delicious.

My friends and I referred to this as "crushing fatigue". I hate it. I started on HRT as well, but right now am only using prescription bio-identical progesterone, and over the counter estriol/estradiol. My body seems to still produce quite a bit of estrogen and it's easy for me to become estrogen dominant, which also isn't…

Those look yummy.

There's a ton of research that suggests that menopause leads to insulin resistance, so it kinda makes sense, yeah.

Agreed. But it's a start. And it makes sense.
-
Hopefully not just rice? That wouldn't be much of a meal. I hope those are just the carbs that go into your meals.
-
While you can do it, it will sure be hard. Google ecoatkins for some ideas.
-
I'm quite different. My estrogen levels were still somewhat reasonable after menopause. My progesterone levels were undetectable.

Holy uninviting wall of text, Batman!

How much protein?

Following. I have been reading pub med studies on menopause and ghrelin (and leptin). Long story short: menopause messes with ghrelin levels, and *apparently* transdermal hormones help that a bit.
