Salad of any kind is a total winner. No one ever takes salad to potluck and everyone is gorging on stews and pastries and cakes… I've found salad actually goes down well! I usually do couscous with raisins, cherry tomatoes etc through it and sometimes some strips of haloumi.

If you can get your hands on some River Cobbler, you can do loads with that! You can cut it up into chunks and it keeps its form - doesn't flake apart like most other fish.
