I typically eat half of the portion that is served to me, focus on fruits and vegetables and, if dinner includes dessert, I hand it off to my husband who can eat pretty much anything without gaing weight.

It's been explained on this thread a number of times. Given the same volume, muscle weighs more than fat. A cup of muscle weighs more than a cup of fat. A cubic centimetre of muscle weighs more than a cubic centimetre of fat. Take your pick.

Lots of changes in my body but, strangely, the one that fascinates my the most is the development of my erector spinae muscles (those rope-like muscles that run along either side of your spin on your lower back). I love those!

Nobody has said that 'a pound of muscle weighs more than a [/i]pound[/i] of fat'. You inferred 'pound'. The rest of us inferred 'volume', as in 'a volume of muscle weighs more than the same volume of fat.' Basically you are disagreeing with something that was neither said nor intended.
