I think it must condense slightly, but not much - I feel like I get about 1/2 gallon of yogurt when i do 1/2 gallon of milk. I usually eat the batch in a week between the hubs and I, so not too sure on how long it keeps from personal experience - but I have read about two weeks.

I have made cauliflower "rice" - use it all the time as a substitute for regular rice. I started mixing 1/2 and 1/2 ground turkey and TVP when something calls for ground beef to cut fat and calories - don't even notice a difference in taste for recipes. I used whey, other posters have used soy. I don't think it matters unless you are using the kind that is powdered egg white protein - then it would just be all egg. :)

Make chicken fajitas, but instead of tortillas, roll up your fillings up in large romaine leaves. SO GOOD!

Also found this - http://theveganmouse.blogspot.com/2010/12/tofurky-pizza-and-buffalo-bbq-tofu.html with a photo - they look good like that, cut into chicken finger shapes, tossed with panko and baked! Much better than fried. I will go plug the stats into MFP and see how they work out that way.

Yes, it's a regular ice cream maker - has an inner canister with a mixing paddle and a big outer bucket where the ice/salt goes. The pumpkin mixture I made tonight takes about 25-30 mins to freeze. I just started it when we sat down to eat dinner and it was done when we were.

I just ate some, thanks to this thread! Mixed in a bowl - 1 cup canned pure pumpkin, 2 packets splenda, 1 tsp pie spice, a splash of 0-cal caramel extract. Warmed for about 20 secs in the microwave, poured on 1/2 cup of cold, unsweetened almond milk. 55 calories total and it was AWESOME.

Drinking one right now! I did add 1/4 tsp of Watkins All Natural Caramel Extract (which is zero calories, but adds a HUGE kick of buttery caramel flavor!) I purchased the caramel extract at walmart, in the baking aisle, by the vanilla and other extracts.
