When I finish my food diary at the end of the day MFP gives me a projection of where I should be in 5 weeks. Every 5 weeks I write that down and use that as my goal / inspiration. Anything longer than that and it gets frustrating.

You can determine how many calories your body needs just to stand upright by multiplying your present body weight x12. You will stay exactly where you are at if you eat that amount of calories a day. Any thing under that is a calorie deficit.

Me, about a month ago. I have 3 other pictures also. 2 are of goal bodies (not me), and one of me and how I looked a couple years ago as a goal to get back too. I try to look at them everyday as motivation.

It's a tough call. I've found MFP to be accurate on most things, but it over-calculates on other things. If I have a question I double check on some of the third-party websites that calculate exercise calories. Basically, moderate exertion = 100 calories. From my experience (20+ years) I would recommend boxing first. Then perhaps Judo or Brazillian Jui Jitsu. You can join a boxing gym or take boxing classes and never have to get in the ring. The higher in the food chain, the higher the mercury levels. Best to limit shark and swordfish they really do have mercury levels that are unsafe. Things like sardines and anchovies are going to have very low mercury. I consider tuna safe at a can a day.
