I don't know if you eat dairy, but if you do full fat greek yogurt with some berries tossed in is tasty. Or scrambled up some eggs and bacon made ahead of time. maybe a nut butter on that apple.

Please note that with such low tris the calculated LDLs (I think) will be wrong. There are two calculations. With the lower tris one formula is more accurate than the other.

I agree with the 10-12 day comment. I remember weakness and muscle pain as well as a foggy head and tiredness. I think that the transition can be eased with some sweet potato and some salt and/or maybe a banana.

You will need to look at the coconut milk that is in cans to avoid much of the crap. Something Forest (sorry can't remember the name) says no BPA in their can.

I'm finding that I might have the opposite problem. I'm stalled out on weightloss. I have plenty to lose. I'm trying to up my cals from around 1500 to around 1700 (maybe). (BMR is something like 1538) Your calc for that meal seems high, but I guess it depends on the portion sizes and if there were any sauces.

I have some roasted brocolli and some roasted carrots leftover in the fridge. I also made some pork "southern-style" ribs (looks like pork shoulder cut up) that I made in the crockpot yesterday. I think they'll all heat up OK for a tasty dinner.
