Sounds like more of a processed food intake thing, not so much an increased carb thing. You can load up on carbs through lots of natural foods that aren't going to have these kinds of issues. (Or at least I'd think you'd be less likely to have this issue as bad.)

You need a surplus of 3500 calories to gain a pound. An occasional treat isn't going to hurt you. You can even lose weight by eating all crap all day as long as you keep your calories in check properly. I wouldn't even remotely recommend it, but it has been done. I eat 2100-3200 calories a day. 5'9" 230 lb male. Girlfriend, 5'1" 115-118 lb female, eats like 1400-1900 a day... I think you'll be just fine if you go over.

Eat what MFP suggests, eat your exercise calories back as much as you can with quality foods. If you're still feeling hungry after that, I'd think something else is going on.

Bread was by far the easiest thing to just drop. I still occasionally have it from buns for burgers, but I am not really sold into a huge "100% committal" approach to anything. Carbs, carbs, carbs, and something very small protein/fat... My personal experience is the same thing. Eat a carb heavy load, <2 hours later starving. I'd advise a good protein and some healthy fats. That would be my solution anyway.
