I really like the periodized layout on the big compounds but I dont like those for the accessory lifts. Heavy 4-6 leg extensions and curls would make my joints hurt especially after all the other heavy lifts in the same day.

There is really no exercise that will target any area for fat loss. Full body strength training that focuses on the big compound movements and a calories deficit to reduce body fat. It will work but it takes time.

I would still log it as walking. The small obstacles you are describing are pretty normal and would barely add any extra calories over walking flat hard surface. The hiking input is quite a bit higher and is meant for off road on more challenging terrain.

My numbers are very similar except I am 20 lbs heavier. I usually work up to one heavy set so 25 reps sounds pretty tough.

You may be right based on the comment posted after that. You can eat maintenance calories for no exercise activity and then create a deficit with exercise. But the deficit is necessary for weight loss. That is not what was said though.

You need to get on a program instead of just making it up as you go. Strong Curves is a great full body program that focuses on lower body and glutes. Incorporates many of those lifts but in a structured way.
