I've done with and just add the blueberries to the whole mess without a problem. One less step in the morning. Thanks for reminding me about overnight oats!

I love them. I've used them as noodles to spaghetti and I've also experimented using them with Asian style peanut sauces! Mmmmm

I do the above in green smoothies. I add coconut water, cucumber, to make it a little juicier. Which I had a juicer!

Just made these. It took my microwave some crazy time. Like 13 mins! But they did take care of my starch craving for the day. And 83cals for a 4oz potato craving is fantastical in my book. :)

Break apart into florets, they don't need to be teeny tiny or anything. Spray/mist with olive oil, sprinkle with kosher salt and roast in the oven until a little browned on the edges, tossing around half way in between. I've done it at 400F and 350F, just depends on what else i have cooking in the oven. I like to do like…
