  • I'm thinking you could try the spaghetti cupcakes with regular cooked spaghetti and jarred spaghetti sauce of your choice if you didn't want to use canned. I've made a spaghetti "pie" pretty similar to that and it worked. It'd be less sodium and easier to do a big batch.
  • I would also like to add as I'm back up having a late night snack that I'd love anybody's ideas for snack foods that are lower in both price and calories too.
  • Best of luck to you. My moment was when my mom was diagnosed with diabetes. My dad has had it since I was in high school (I'm 31). I started out 80 pounds overweight, now about 50. By the grace of God, reality check moments can last into real action.
  • Curry sounds great! I'll try that next time I see a sale on chicken.
  • Another good one. The calories will vary depending on what you serve it with, but it's easy to stay under 500. http://allrecipes.com/recipe/slow-cooker-cilantro-lime-chicken/detail.aspx?event8=1&prop24=SR_Title&e11=cilantro%20lime%20chicken&e8=Quick%20Search&event10=1&e7=Home%20Page

A cup of Aldi's Get Balance cereal (off-brand Kashi, much cheaper), a cup of grapes, and a cup of…
  • Take a look at this. http://www.usatoday.com/news/health/weightloss/2010-01-03-diet-menus-recipes_N.htm They advocate 3 meals and 2 snacks. It works for me. I'm aiming for 1600 calories, and it's working OK for me. I don't always use their recipes, but the schedule and the general division of calories is pretty good.
  • I haven't seen it at Walmart, but my local Hy Vee has it with the ethnic foods. There are a lot of recipes out there, though, for hummus without the tahini. The taste isn't quite the same, but it can be done. If you want the taste of the sesame without buying tahini, you could also use sesame seeds. Use them whole for…
  • Cilantro lime shredded chicken taco filling - easy, yummy, very low in calories. Do use fresh cilantro. Dried just isn't quite the same. I didn't use 3 pounds of chicken. It turned out fine with less. It would freeze fine, but it didn't last that long at my house.…
