So yeah. I have been doing Zumba 3x a week for the last two months and have gained weight. About 5 pounds. I'm now carefully tracking everything I eat to make sure I eat enough. Does anyone know what "enough" is? If I burn 400 calories, and have say 300 calories left over in my day. :)

I have had Celiac since the age of 6 (I'm now 40), and if you avoid the gluten-free versions of most cakes/cookies/breads it does force you to eat better. I can't eat most french fries since they are fried in the same oil as breaded fried foods. But I would prefer not to have another autoimmune disease! (I"m also type 1…
