I think Mexican would be an easy route. I love black bean & sweet potato enchiladas, bean toastadas with a fresh pico de gallo, or lentil tacos. Lasagna substituting tofu for ricotta is good. 5'1" - GW 130 - CW 157 - SW 170 My goal is to average net 1240 cals/day. I've been doing yoga 2-3 times/week and a cardio class 2-3 times/week. I always eat back my work out cals within the week if not on the same day. I've been at this since mid October - so far, so good!

I also find that baking them doesn't work very well. I usually spray them with a little bit of cooking spray (olive oil in the Misto) and cook them on the stove top. Obviously not as healthy as baking, but way better than a full fry.

CookingLight.com has a great recipe for samosas using egg roll wrappers. They are on the menu for dinner tonight since we liked them so much last week!
