We had stuffed tomatoes and beer battered tofu, which worked out great and used up a ton of fresh herbs.

Hooray! I enjoy this thread. We had veganized shepards pie and a baugette. Used some peas from the garden, and the only potatoes we had in the pantry were purple fleshed, so the finished dish looked a bit Prince inspired B)

We had linguine with pesto, breaded tofu and roasted romanesco cauliflower from our garden.

For brunch we had mushroom tofu scramble, hickory sage seitan "bacon", toast with earth balance and lots of coffee. Thinking about pesto and gnocchi for dinner but not totally sure yet

I just got my seed order last week and am ready to go! Veggie broth soup with fennel, cannellini beans, kale, field roast Italian sausage and butternut squash ravioli served in baked acorn squash "bowls" with a big pinch of nutritional yeast on top. Would have been great if someone had remembered to grab a baguette on the way home!
