I track my carbs as I am type 1 diabetic so it helps me work out how much insulin I need. I try to keep protein up and often go a little over on sugar... but as people say, as long as your cals are under you will be fine. I set my carbs quite low so if I go over it's not the end of the world :)

I count everything - but if I go over on the days where I have to correct a hypo, then at least I have a reason and I remember why it happened :) Like you say, glucotabs usually come to just under 100 cals.

I make it with some grated apple and cinnamon and prepare it like oatmeal with water. It keeps in the fridge for days and I just reheat it every morning :)

I like to make 'chilli' with chopped mushrooms and crushed cannellini beans in place of mince. Canneloni stuffed full of veggies is a great one too!!! I make avocado pesto for the kids i babysit and they love it!
