I do this as well! Makes great chicken enchiladas and soups. I eat a portion of the chicken with steamed veggies on the side. Oh yeah, the gain post surgery is disappointing, but do you best not to worry and try to stay away from the scale. I was shocked at my 2 weeks appointment to find I had dropped 20 pounds. I am almost 4 months out from RNY bypass, and I eat 800-900 calories daily. I use the Laptop Lunches Bento Boxes to measure out my food for the day, and then eat that. It really helps me keep focused. I am bad at logging my food here, but not at actually counting my calories and such.
