I have been working 12hour shifts for over 20 years. I worked the DDNN(two 12hr days followed by two 12hr nites) for most of 16 years and the past 4/5 years I have worked NNNN(four 12hr nights). I work 4 nights at a time 730pm to 730am, then I have days off. I have trouble tracking my food also. I added a middle of the night (3-4am) snack to my food diary.
