my favorite recipe: cut sweet potatos into 1 inch wide strips, about 1/2 cm wide lay them flat on a baking sheet, drizzle lightly with olive oil sprinkle a mix of coarse sea salt, rosemary, thyme, and oregano bake at 425 for about 35 minutes, watch for golden brown edges. These are DELICIOUS!!
