  • Half an avocado, mash it up with lemon juice, Cajun seasoning (salt, pepper, garlic, etc), ½ tbsp light sour cream, throw in a couple chopped up cherry tomatoes and eat on a piece of toast. You can add boiled egg slices for breakfast too.
  • I hear you. Thyroid is the kind of thing where if you don't actually have the problem, it's hard to understand (even with friends in real life). But it doesn't make it any less frustrating when people make comments like that. And also exactly why it's nice to have this forum :) I can't tell you how much better I feel…
  • Just outside Charlottesville :)
  • We love spaghetti squash and will try mixing just about anything with it. The other night I threw chicken, a piece of bacon, basil and minced garlic in a pan and cooked it and then mixed that in with the spaghetti squash (cooked in the microwave), chopped tomatoes and parmesan cheese, delish.
  • You can add me too if you'd like. I was diagnosed hypo back in August and now I'm on Armour, eating better and working on getting in more walking. It's made a big difference in how I feel.
  • Spaghetti squash. I bake it (or microwave), chop up tomato (remove seeds) and mix it together with some parmesan cheese an it's delish.
