If you're not a diabetic and you are coming in under calorie and getting adequate nutrition....then enjoy the desserts. Do be aware that there's no real nutritional value to most desserts so you might be better off just having some fruit.

I make these occassionally, but add about 1 tsp baking powder to lighten them up a little. Once you've made the batter, let it sit for a few minutes to thicken up and it will hold the bubbles a bit better...making it a lot more like "normal" pancakes.

HR is not the best measure of effort for really short intervals (less than a minute). HR lags effort, so you can't really get a good measure of effort using it. For intervals like you mentioned, I would use Preceived Effort if you don't have access to a wattage meter(which is actually more cycling related than running).
