Losing 30 pounds in 30 days is extremely unhealthy. Any more weight loss than a pound or two a week is bad for you. The first week you start any weight loss, you're likely to lose up to 5 pounds the first week, but even then, that would only be maybe 10-12 pounds in 30 days.

Try putting some more calorie-rich foods in your diet, like mixed nuts, Greek yogurt, stuff like that. Trying to eat an extra 400 calories worth of celery is so much harder than eating a half cup of mixed nuts. Also, maybe add a cup of fruit juice with one or more of your meals. Great nutrients and lots of natural sugars!

I suggest reading the book "Catching Fire: How Cooking Made Us Human." I don't agree with everything in it, but it will definitely give you a very well-rounded understanding of how a raw-foods diet works and why you should be so careful when doing it!

I would say that you should be aware of how many calories you are burning so as to avoid putting your body into starvation mode. If you are aiming for 1200 calories, and consume 1200 calories, but burn 500 calories doing exercise, then you have only consumed a net 700 calories, which may not be enough for your body. If…

I'd say the headaches are more due to your caffeine cutoff! I tend to get headaches if I'm dehydrated, not overly hydrated. Herbal teas are delicious and caffeine free, and therefore should not dehydrate you. Green tea is lower in caffeine, and black tea can be nearly equal to drinking coffee.
