I like hummus on occasion but it tastes like bean dip with garlic and lemon to me, and a little goes a long way. I prefer baba ghanoush which is pretty much the same recipe only roasted eggplant is substituted for the garbanzo beans/chick peas.

If I have leftovers I just pop them back in the oven to reheat them for another meal. They don't get that "leftover" taste and flabby skin that microwaving gives them. It only takes about five minutes to heat them through at 400 degrees.
