I increase my "long" run each week until I go over what I'm going to race. So, I started doing 4 miles, then increased to 4.5, then 5, then 5.5 (ready for 8k). I have her Ripped in 30 and 30 day shred...I like both--really good for toning, etc. I mix them in with other exercises (running, other dvds) just to keep my body guessing, but I do them at least 1-2/week.

I would suggest adding a protein powder--high protein, low carb--to yout diet, especially if you are exercising a lot.

That is a super tough schedule. I'm not a single mom, but I do work quite long hours. I find that the only way I can fit exercise in is to do it before my children wake up. I think most people change the macros to support a higher level of protein--just as you say--to maintain muscle while eating at a deficit. I do 40% protein, 40% carbs, and 20% fat.

I got a great deal on a set of Bob Harper dvds at Target and they are awesome--great variety of exercises for strength and cardio, plus he has some 30 minutes ones and some 60 minute ones. I really like all of them.

Not every week will bring results on the scale, so you really need to get your motivation from somewhere else. Personally, I get mine from feeling better, more in control, generally pleased with myself for doing better for myself and my family. Not sure about all slow cookers, but mine has 4 settings: LOW: 2 choices 8 or 10 hours High: 2 choices 4 or 6. I usually use the low b/c I like how flavorful things are on the lower settings.
