That does look yummy! I make something similar w/o the soup - just a jar of salsa & some taco seasoning. Shred the chicken, add a little 2% shredded mexi cheese and sour cream ... makes great enchiladas, or mix with brown rice.

I've made an "egg casserole" before which I can bake up on Sunday, then reheat throughout the week. Basically, I line the bottom of a greased 8x8 dish with hashbrowns (fresh or frozen), spray with olive oil, and bake at 375 for about 10 minutes to crisp them up a bit. I used to stop dead in my tracks if my husband walked in the room while I was exercising. He never said anything, never made fun of me ... it was all me. I honestly don't wear ANY shoes when doing Turbofire at home due to the carpet. I know, not recommended ... believe me ... I know! I'm actually a certified TurboKick instructor. I traded in my Zumba 1 after using it once. I haven't personally tried Zumba 2, but I have seen it in action and it looks MUCH improved!

I would guess AT LEAST 500 calories an hour. I usually burn 600 - 750 depending on how many new songs we do, but I have several people in my class that wear HRM or BodyBuggs and they never burn less than 500.
