Typically I'm not a fan of recipes that call for a can of soup, but this is really good, filling and easy to make

My favourite thing to do with chicken is actually to put it in the slow cooker with just actual salsa (verde makes for great white chicken chili later!). I'm literally adding nothing but vegetables and some salt to the chicken, and it doesn't get much healthier than that. Or easier!
I was recently at my sister's helping out while she recovers from a C-section... Day 1 I put 9 chicken breasts in the slow cooker on High for 5 hours with 2 jars of salsa verde (and literally nothing else). It fed the whole family for 4 days. We had tacos, burriftos, salads, and white chicken chili. Highly recommended for the calorie-conscious and on-the-go !0 -
That does look yummy! I make something similar w/o the soup - just a jar of salsa & some taco seasoning. Shred the chicken, add a little 2% shredded mexi cheese and sour cream ... makes great enchiladas, or mix with brown rice.0

Here is a recipe I have for "salsa chicken" and my family it.....
Salsa Chicken
4 boneless skinless chicken breasts
1 cup salsa
1 package reduced (low) sodium taco seasoning
1 can reduced fat cream of mushroom soup (condensed)
1/2 cup reduced fat sour cream
Place chicken in slow cooker. Sprinkle it with taco seasoning, then pour salsa and soup over the chicken.
Turn heat to low and cook 6-8 hours. Remove from heat and stir in sour cream. Serve over rice. (rice not included in nutritional info below)
Makes 4 servings.
Per serving:
calories 160
total fat 5 grams
saturated fat 3 grams
cholesterol 54 milligrams
sodium 537 milligrams
carbohydrates 9 grams
dietary fiber 1 gram

I make salsa chicken in the crock pot without any canned soup. I just use boneless chicken breasts, a jar of salsa, a can of black beans, and a can of corn. Cook on low for 4-6 hours. Shred the chicken and return to the crock. If it's too dry at that point I add more salsa. Stir to warm everything through. I find that boneless chicken cooks in about 4-5 hours but you could do 6 if you had to. Any more time than that the chicken dries out too much.0

Walmart sells a Great Value salsa that is Peach Pineapple Chipotle and once that is Black Bean and Corn Salsa, and both are awesome on chicken! Tons of flavor without adding a lot of calories. I put the peach pineapple chipotle salsa chicken over a cup of brown rice and it is delicious!0
