3000 is definitely not too much for an 18 year old. You'll probably need even more than that. Shooting for primarily clean stuff is great, but when it comes down to it if you're bulking it's about calories. So on top of the clean stuff, the ice cream or whatever is fine.

I put all the ingredients into one meal in the log, and save that as ONE giant meal, then I delete them all from that day's log, go to "add meal" or whatever it is, and then put .25 of one serving of "XYZ meal" if I've split it into 4 portions. Part of me doubts you'll be able to hit 2500 cal/day on that stuff, but who knows. Rice Cakes are worthless calorically, and get real Lays instead of baked - you need all the calories you can get. Clean eating isn't a religion and no one is grading you. I'm a fan of eating pretty damn clean myself, but you have to live and you have to enjoy yourself. Please continue to drink if you enjoy it. Same goes for anything else you enjoy.
