I just want to say good for you for sticking with your commitment to not eat out! YUM!!! Just tried this and it was delicious! I used splenda instead of stevia and I topped the apples with some walnuts instead of the ice cream.

I thinly slice zucchini into long strips, grill, and then take a dab of LC cheese, roll it up to make zucchini pinwheels. Yummy! I've also added a little bit of sugar or Splenda to LC cheese to make a mini "cheesecake"
