I cook my mushrooms, onions, red pepper and spinach in the skillet first, when all that is just about done I add the eggs in... I make it in a small skillet so I don't even attempt to fold it... slap it on a plate, it's like a little egg pizza! OH and don't forget the mozzarella cheese!

You're going to lose weight faster in the very beginning... You are down 24lb since January?! That alone is something to be proud of. I remember how difficult it was for me to break that 200lb mark.
