Lean meat, basically. Chicken, fish, turkey, lean pork all have very low fat, no cdarbs and are basically pure protein sources.

Curious, what's your source for this? Grapes contain naturally occurring melatonin and are usually touted as a good before bed snack. Peanuts/peanut butter before bed has also been touted as improving sleep, though a study didn't show marked improvement - it also didn't show any detriment.

Not really, save for setting your macros to match whatever the recommended macros for carnivore are. MFP doesn't have specific settings for specific diets, it just allows a user to customise their macros, fasting schedules, number of meals etc.

Do you need a multivitamin? Have you been tested for deficiencies? This is definitely a question for your doctor, you may be taking something, spending money, and experiencing issues with your blood sugars for something you don't even need.

May I recommend you see an exercise physiologist? They're trained at working with people with chronic issues, along with other health and physical challenges, to ensure that you have a program which takes into account any needs you have and, most importantly, doesn't cause you any damage!

Apps like Chronometer are much better with micronutrients, or you can use MFP, but as I say, you have to make your own entries and enter the micronutrient data yourself, which means finding it, and I am honestly not sure how you would do that beyond whole food products which you can find the data for on the USDA database.

There is no advantage to any specific timing of exercise that isn't entirely and completely eclipsed by the advantage of working out when it works for you. Consistency is key, and consistency happens when the timing fits with your schedule.

I'm skeptical of the cortisol causing the bloat, to be honest. Cortisol affecting weight is a thing, but I have never, ever heard of it causing notable bloating. I think you need to consider some of the other potential answers, including those put forward above, rather than putting it down to that.
