I do this with a lot of different veggies, using minced garlic from a jar. I also like to toss some Parmesian cheese on it when it comes out of the oven. Yum!

I don't know about Carnival, but we've cruised two other lines and there were ALWAYS healthy options, with calories and some other nutritional info marked right on the menu. I think there are a lot of different ways to look at this that still come out with good results. The bottom line is: if your pee is nearly clear, you are hydrating enough. If not, you aren't. That's the test that will tell you if your method is right.

Calorie counting is enough! Not ideal for good health, but you can still lose weight (or at least maintain). I do mission trips to 3rd world countries and I know what you mean.
