You're not actually following the 5:2 diet. That diet is 500 calories 2 days a week, then as many calories as you want for the other 5 days a week. You're only using the liquor that is left after all those things have been cooked in it so the calories are fairly negligable. I'd just leave a few calories at the end of the day. Agree with this - I was vegan for 3 years and I got fat. IMO it will be much harder to lose weight this way as you'll be limiting your food choices even more and it's much harder to get the nutrition you need from a vegan diet.
