Then you drain and allow to dry. Then cook them up. There is a Jicama "potato" salad recipe as well, same precook.

No clue... I have always had this problem. Stop fighting it and use it to your benefit! Plan food out, think about your planned meals and snacks, and what you will make tomorrow. When you get excited about what you planned you stay on track.

I wouldn't worry about it. Keep going! Drink a lot of water and get a foam roller, and be sure to stretch. This is a lot of work on the muscles, and depending on what you were doing before your body is likely adjusting to the new demands. You are probably retaining water.
