I am not a big eggplant fan but keep getting them from our CSA, so I have had to get creative! I also don't like that eggplant tends to absorb all the oil/fat that you cook it in. I just upped mine this week - I agree it is scary! I never thought I would be stressed about needing to eat more food while trying to lose weight!! We'll see what happens but I think it was the right thing for me.

Let you brain overrule the scale. If you are eating enough food and exercising, you know you are doing the right things. I know it is hard, but GIVE YOURSELF A BREAK!
