How about a lettuce wrap with 'breakfasty' innards? Like cream cheese spread with lox or other salmon, capers and a thin slice of red onion. Or, grilled ham topped with a slice of cheese and a grilled slice of tomato--or ungrilled to keep cold. I haven't eaten breakfast yet and these are sounding good to me.
