I eat 2 eggs every day. I had my cholesterol checked and it was fine. I am sure it is different for everybody, but I think one a day is probably not going to hurt you.

You earn calories to eat when you exercise. I was confused by that too. You may need to eat a little bit more than 1250 if you are burning hundreds of calories.
