Log like any other day. There's nothing wrong with going over your calories once in a while, it won't ruin your weight loss. Just log the day and start fresh tomorrow!

It's honestly hard to say, different workouts have different benefits, how many calories you burn is only one aspect. If you're confident in your burn number I would aim to eat back at least 50%. Because of the large number, not eating them back would create a huge deficit, which in the long run might not be the best idea.

How long before your workouts do you eat? Could you be going into your workouts too soon? I can't eat anything substantial within an hour of my HIIT workouts for the same reason.
