The black bean hummus recipe below is great! Almost Fat Free Hummus 1 15oz can Chick peas-reserve liquid 2 tsp Tahini 1 - 2 Tblsp Lemon juice (add 1 at a time) 1 clove Garlic Salt to taste Add chickpes liquid for moisture instead of olive oil you can also throw in a couple of slices of roasted red pepper!!! YUM!!!

you can find Seitan at Whole Foods, Trader Joe's, Publix & Kroger. Or there are plenty of recipes on line.Just make some yourself.I like the book "vegan on the Cheap" & Post Punk Kitchen. They both have great recipes for making things from scratch.
