I can roast a whole chicken and turns out nice, I guess I was thinking more about boneless skinless breast meat more so. However I noticed a lot of people use lemon and I never thought to stuff it with yams and carrots, usually just celery and onion. Thanks for the tips :) I do love a whole roasted chicken!

I have covered my baking dish with tinfoil never thought to cover the actual chicken with seasonings, I will try that for sure :)

I do like chicken, I didn't say I didn't I am just not good at cooking it :) I do prefer fish but I like a lot of food and a lot of meals with chicken in it. I just like to mix things up and if I can learn ways to cook chicken that I enjoy I would love to incorporate more into my diet.

Great responses and great ideas. I'm sure a lot of it is my cooking method, I tend to over cook chicken in fear of poisoning my family LOL and I grew up on rawhide steaks and pork chop hockey pucks....I love you mom hahaha I will give some of these ideas a try and change things up. 10 years this past February that I quit, best thing I've ever done for myself! Good for you it is a very hard task to take on and it's truly a day by day process. It gets easier and the pay offs are so worth it! Good on you !!! :happy:
