  • We call it crawfish but here are some ideas: Gumbo, etoufe', and fried crawfish tails but they are not too healthy. I would go with Crawfish Gumbo myself. You can Google that and a ton of recipes will come up. Also you can basically substitute crawfish for chicken in soups and casseroles, that's what my sister in law does.
