  • Breakfast: French bread toast with peanut butter, cara cara orange, iced moka. Lunch: salmon salad on saltines, crudites (baby carrots, tomato slices, yellow pepper, broccoli) with ranch dip. Dinner: Instant Pot "roast" chicken, rice, pan gravy, green beans, yellow squash. I'm going to try not to snack today -- I tore my…
  • I was so wrong about lunch. I ended up locking my house key IN my house (why), so I can't go home for lunch; I have to wait for my son to come home from school with his key, which means I am ordering a takeout grilled chicken salad at work. Bleh.
  • Breakfast: cottage cheese, 12-grain toast with peanut butter, cara cara orange, I may grab a coffee at work later. Lunch: assorted crudites (broccoli, cauliflower, cucumber, tomato, baby carrots) with ranch dip, avocado tuna salad with pickled beets. Dinner: Papa Murphy's night -- thin crust, half Hawaiian with black…
  • Breakfast: green-chili sourdough toast topped with avocado, pickled beets, and sea salt (PHENOMENAL, highly recommend), milk; I might grab a coffee here at work in a while. Lunch: salmon salad and crudites if I go home; cheeseburger and fries if a friend is up for lunch. Dinner: turkey-and-corn chowder with lots of spinach…
  • Breakfast: about a third of a pomelo at 2AM (whyyyyy); banana at 5AM; half a PB&J, cottage cheese, and coffee at 7AM. Lunch: tuna salad (like, actual salad -- bed of spinach topped with tuna, beets, and herb vinaigrette), raw baby carrots, tomato slices, and broccoli. Dinner: Parmesan-roasted chicken breast, cauliflower,…
  • Breakfast: cottage cheese, banana; I'll bring an apple to work and pick up a coffee there. Lunch: some kind of sandwich TBD (options are PB&J, tuna salad, salmon salad, or a tuna melt), crudites with ranch dip. Dinner: carnitas tacos with guacamole, cucumber-tomato salad -- I wasn't hungry at all last night, so I skipped…
  • I did some good meal prep over the weekend, so I am feeling very smug this morning. Breakfast: loaded frittata (spinach, tomatoes, red onion, olives, bacon, Parmesan), green-chili sourdough with yogurt butter; I'll pick up a latte on the way to work. Lunch: tuna sandwich, crudites (tomatoes, cucumber, broccoli,…
  • I eat pizza about the same amount/frequency as I ever did. I happen to like thin crust pizza, so that helps. I ask for it with light cheese (not low-fat cheese, I mean -- just less than they usually use) and plenty of flavorful vegetable toppings. I keep the meats to one if I have one at all, and try to choose a leaner one…
  • Breakfast: cottage cheese, banana, coffee. Lunch: leftover (thin crust, pineapple) pizza, side salad (spinach, beets, lemon-herb vinaigrette). Dinner: taco night! Homemade carnitas and guacamole tacos, cucumber-tomato salad.
  • I lied. Shopping took twenty-five million years. I ordered pizza as originally planned. B)
  • Breakfast: smoked quiche (filled with ham, tomatoes, spinach, onion, and mushrooms), blueberry scone, hazelnut almond-milk latte. Lunch: Cobb salad, iced tea. Dinner: Parmesan-roasted cauliflower & chicken breasts. Okay, so my original plan was to have pizza night tonight (because I already have to shop after work), but…
  • Breakfast: two over-medium eggs on 12-grain toast with yogurt butter, coffee. Lunch: probably leftover black-eyed peas with greens (leftovers last forever in a two-person household). Dinner: Sriracha ramen, baby carrots and cherry tomatoes. Snacks: Jell-O, cara cara oranges, peppermint marshmallows.
  • New year, same me. :D Breakfast: cottage cheese, banana, coffee. Lunch: leftover black-eyed peas (cooked with salt pork and collard greens), cheesy corn muffin. Dinner: turkey-and-cheddar hoagie, cherry tomatoes, sauteed yellow squash. Snacks: apple, saltwater taffy, peppermint-bark pretzels, etc.
  • The closer we get to the holidays, the more treats accumulate in my kitchen; simultaneously, I am trying to use up everything in the fridge/pantry to make room for our Christmas feast and leftovers, so my meals are just getting weirder and sweeter. Breakfast: leftover crackers, salami, and cheese from a work party; banana;…
  • Breakfast: cold Hawaiian pizza, iced tea, I am doing great. Lunch: chef salad and Johnny bites (small cheesy potato balls with green chili). Dinner: not set in stone, but I'm thinking grilled cheese sandwiches, tomato soup, and crudites.
  • I ate out for all three meals yesterday because of a crazy work/holiday fun schedule, so I'm aiming to do a bit better today! Breakfast: homemade breakfast burrito (eggs, greens, tomatoes, a little cheese, hot sauce, tortilla), coffee. Lunch: leftover mussels in white wine & garlic sauce, crusty bread for sauce-sopping,…
  • What a great step! Every good choice is a reason to celebrate. :)
  • I like a quick English muffin sandwich; if you have time to cook an egg and fry a slice of bacon, great, but if not you can do avocado and tomato with ham, or cream cheese and turkey with spinach, or basically anything else. I like to buy the high-fiber muffins and then I just make sure to add protein, fat, and a vegetable!

  • Why is 200 calories a fifth of your allotment? A thousand calories per day is not an appropriate goal for 99% of adults.
  • Breakfast: toast with yogurt butter, coffee. Lunch: more leftover chicken in mustardy mushroom sauce over freshly steamed spinach. Dinner: quesadillas and crudites if I don't feel like cooking; jalapeno-pineapple pork over rice, side of green beans, if I still have a little fight left in me. Snacks: I legitimately have no…
  • So, this was the morning I learned apple fritters are roughly the size of my own head. I ordered one at breakfast with my son because I thought they sounded nice and light. I was... incredibly wrong. Who knows what further mysteries await! Breakfast: most of an apple fritter, coffee. Lunch: leftover chicken in mustardy…
  • I'm usually pretty basic -- just a little brown sugar and yogurt butter. I keep meaning to branch out into savory oatmeal, though.
  • I woke up at 3AM with a killer urge to eat potato chips, so... that happened. Breakfast: aforementioned 3AM chips; actual breakfast will be cottage cheese, an Asian pear, and coffee. Lunch: turkey and cheddar sandwich on 12-grain bread, simple butter lettuce & tomato side salad. Dinner: chicken thighs in mushroom sauce,…
  • When I buy them on Amazon, I buy Daelmans; the one I had today was a Rip Van Wafel (I snagged it from the cafe in the building where I work). I like the Daelmans much better -- they're crisper, with a more buttery flavor to the cookie and real caramel instead of vanilla curd -- but the Rip Van Wafel was still, you know, a…
  • Breakfast: turkey flatbread with loads of vegetables (early); coffee and a stroopwafel (now). Lunch: last night's leftover turkey noodle soup, also loaded with vegetables. Dinner: it's grocery night and I have failed to plan, so... probably a frozen pizza or something similarly convenient and poorly balanced. Snacks:…
  • Thank you! It looks FANTASTIC; I'm adding the ingredients to my grocery list immediately.
  • May I have some details about this? It sounds amazing.
  • Today's going to be good, I think! Breakfast: basic smoothie (yogurt, milk, frozen fruit, frozen spinach), coffee. Lunch: either leftover zuppa Toscana or leftover chili mac. Dinner: melted Fontina on toast; raw broccoli, cucumber, tomatoes, and carrots with ranch dip. Snacks: candycane Joe-Joes (the box seems unending),…
  • Breakfast: coffee at home; guacamole & bacon burrito and small vanilla-cherry Coke at work. Lunch: leftover zuppa Toscana from last night. Dinner: toasted baguette rounds with baked Brie, crudites, and fresh fruit. Probably also cocktails. Snacks: sunflower seeds, candycane Joe-Joes.
  • I have large grow bags in the easement between my apartment and the driveway. I just grew tomatoes this summer (#YOLO), but I'm planning to do more next year -- tomatoes, sure, but also eggplants, peppers, cucumbers, etc. Anything that's delicious and does well in a hot climate, basically! The grow bags are surprisingly…
