I like it in smoothies (aka green smoothies or green monster smoothies). I usually blend almond milk, frozen banana, frozen strawberries, vanilla protein powder & either kale or spinach (fresh or frozen). It doesn't sound very appealing but it does taste good.

Here is the meal I made this week (from Cooking Light) for the cooking challenge. It was really good!! http://www.myrecipes.com/recipe/two-bean-soup-with-kale-10000001924699/ Two-Bean Soup with Kale This hearty vegetarian soup warms up chilly nights. Use any type of canned beans you happen to have on hand, and add…

I like to make my smoothies with 1 cup unsweetened vanilla almond milk (40 cal/cup), frozen or fresh spinach or kale, 1/2 frozen banana & some frozen strawberries. I'll have to try the coconut extract! That sounds like a good addition!

I also made this... Baked Parmesan Tomatoes http://www.eatingwell.com/recipes/baked_parmesan_tomatoes.html From EatingWell: August/September 2006 A sprinkle of Parmesan and a drizzle of olive oil transform tomatoes into the perfect side dish. Or try sandwiching them between slices of your favorite whole-wheat country…

Here is the Thai Veggie Burger recipe that I made from the Peas and Thank You cookbook. It was really good! I like to cook about half a bag of frozen chopped broccoli and mix it with the Lean Cuisine mac & cheese.

Did this challenge fizzle away? :(

Level 2, day 2 complete. I really wanted to stop about 5 minutes into it but I kept going. I'm not liking this level right now! I always try to do this in private but my kids always seem to follow me or show up while I'm doing it. My 10 year old son was watching me yesterday and made a comment that a lot of what I was…

My name is Mary and I live in Milwaukee, WI. I have 3 kids (10, 7 and 4). I was a stay-at-home mom for about 9 years but just recently went back into the IT field part-time. I didn't have a weight issue until after I had my 2nd child. I lost all the pregnancy weight easily after my first but after my second, I just…

I just completed Level 2 day 1. I liked the pendulum lunges but the rest was sort of tough for me because of all the planks. I have a hernia and the planks always bother that. I just have to be careful when I'm doing them. Other than the planks, it was a fun one!! Last week I only completed 2 days of level 1. :(
