I use short-grain brown rice to make lightly seasoned sushi rice, then top it with raw/blanched veggies and fingers of sautéed tofu (extra-firm silken, in the shelf-stable boxes). If you dredge the tofu in a mixture of cornstarch and cornmeal then pan-fry in a little bit of oil, it comes out lovely and crisp.
