On weekdays I tend to pre-plan my day and log all meals/snacks after breakfast. I pack my lunch in the morning so I know what I'm having for that meal. I have a Fitbit Aria scale. It's very accurate and consistent. Plus it auto syncs with Fitbit and MFP so there's no hiding from a weigh-in. ;-) It's a little spendy, but worth it.

I recommend underestimating calories burned through exercise. Machine tallies are notoriously generous in calories burned estimates. For more accurate tracking you could try a heart rate monitor and record the calories burned from that device.
