I only weigh myself once or twice a week. Always at the same time of day - get out of bed, go to the bathroom and weigh in before eating or drinking anything. It gives me much more accurate results.

This is known as delayed onset muscle soreness (DOMS) and it's a b*tch. What really helps me is foam rolling. Stretching and light cardio also helps. If it's really bad have some ibuprofen.

Well it depends -if you have excess fat then cardio will help to slim you down. However if you're looking to build muscle then lift heavy weights/low reps which will give you a more 'toned appearance.

You would really need a kitchen scale. It would be about 60-65g raw chicken. If you know what size the bag/packet is then you could eyeball it (e.g. if it's a 600g bag of chicken breast then make 9 or 10 portions of roughly the same size)

There's a whole bunch of exercises you could try - you don't have to run if you don't enjoy it. Powerwalk, cycle, zumba, pilates, yoga, lift weights, use the elliptical, go swimming. Try group classes and try working out on your own. Try at-home workouts like p90x or Insanity. Don't limit yourself to just one thing :)
