Our real problem is that we have not changed all that much from our pre-historic ancestors. Our drive to eat is the same. We are surrounded by food, they were not.

Another term is "metabolic flexibility". Correct me if I'm wrong but don't we already have metabolic flexibility? We don't need to eat a certain way to attain metabolic flexibility. Isn't metabolic flexibility one of the reasons our species has survived?

I also want to add, wether or not it is a clinical addiction really does not matter. What matters is how it feels to the individual going through it...

When it comes to food, IMO there is no such thing as a food addiction. What I do believe is this, we have not changed all that much since our pre-historic ancestors. That said, our environment, on the contrary has. So what was once a virtue, is now a vice and we fight our instincts constantly...

That does not sound like a comfort issue. Sounds more like eating out of boredom. At this point, it probably has become a habit. The solution IMO, is to replace the habit for a more productive one that gets you closer to your goal...

Yeah I don't go for the sugar free stuff either. Just never tastes good to me. I tried the pancakes with potato bread and I liked it. I will say however, the egg whites made the texture off. But then again, I was never expecting them to actually be better or even the same as regular pancakes...
