Those are likely to be the issues you need to work on there. Find non-food ways to manage stress and anxiety. Get help for your OCD as well, because that likely contributes a compulsive element to the binge and your desire to overcompensate at the gym the next day. Good luck!

Your eating disorder will trick you into thinking you can recover without help. You cannot and will not. You need to get professional help. And yes you should never "let up" eating. You need to thrive and survive. One 2000 calorie day will not do that.

I'm a woman and I'm a similar height to you. I can lose rapidly on 2000 cals per day. My TDEE is about 3300 so doesn't surprise me what you've calculated. You need to sort out your disordered relationship with food and start upping your calories. And by upping I mean like triple what you're eating at the moment.
