Thanks for the tips! I do a good amount of walking as I live in nyc so even just walking to the train in the morning is good ...but also have to remember to tell myself that exact phrase that "rest is just as important".

A great way a chef friend of mine taught me is to first fry with a little oil or butter to get them warm, then continue to saute with balsamic vinegar, once they're just about 30 seconds to being finished, drizzle some honey on top of all of them to give a nice crispy glaze. They come out wonderful!
