Get packages of small chicken breasts when they go on sale and freeze them.Same for beef..I buy the packs of 4 oz sirloins when on sale to keep on hand, and the family size ground beef (low fat) that I then cut in half and freeze. I made a ground beef casserole tonight and I added every ingredient into the recipe maker and saved it. It's a bit time consuming but I do it for all the meals I make as I don't eat out much.

I had one for the first time the other day...the brownie one. I had to heat it in the microwave as it was hard as a rock. Loved it heated, but it did upset my stomach a bit. I also tried the apple pie bar..that one was really good and did not upset my stomach at all. I have the choc. peanut butter..haven't tried it yet.

I actually enjoy counting and logging because I know I am using it as a learning tool that will benefit me for life. Do I plan on doing it forever? No....but for now I have to because my "guesstimates" are always waaay off. :)

Most of those pre-made parfaits use vanilla yogurt. I make my own parfaits with Dannon Light and Fit Carb control vanilla, Bare Naked banana nut granola, and berries. Unbelievably yummy! I was diagnosed with pre-diabetes too. 2 of my sisters have developed type 2 diabetes and my mom died from complications from type 2 diabetes. I have made many changes over the past 2 months as I take this diagnosis very seriously. Hoping my efforts will pay off. Scary disease.

Thanks for the replies and help...I understand it much better now. I'm going to just keep tracking the total carbs, but choosing foods with higher fiber and lower glycemic.
