  • Half a package of organic Asian Quinoa mixed with sauteed onion, mushroom and spinach sprinkled with blueberries and sunflower seeds. Delish!
  • 2-cups of spinach, 2 oz. white onion, 1 oz. baby bella mushrooms, 1/4 c. blueberries, 1 Tbspn. Pepitas, 1 Gardein vegan breakfast sausage. Heated everything for about a minute. Mixed with a little salt and a lot of black pepper.

  • So last night I made roasted brussel sprouts with white onion and wild mushroom, chopped garlic and served it on top of wilted fancy greens, added some pepita seeds and white beans, greens seasoning and a lot of black pepper. It was delicious and so simple to make!

  • For example the other night I made a big thing of lentils simmered in onion stock and I added mushrooms (all different kinds), shallots, pumpkin seeds, salt & pepper, a little turmeric and added some shredded apple, walnuts and carrot on top. I paired it with a sweet potato. It was delish! :smile:
