Planning is key with Paleo. I would make egg cups and your favorite veggie for the week so you can just grab and go. Or maybe a piece of fruit to go with the eggs. What about leftovers from dinner? Steak? Chicken? You could also make those muffins you mention the night before.

Each flavor has a different amount of carbs and fiber. For instance cookies and cream and chocolate chip cookie dough have 3 net carbs and 17 grams of fiber. And the carbs are from nuts, not sugar. They are a great sub for breakfast IMHO. Go for it.

Under 100 is considered "lower carb". Low carb is probably 50 or under. Make sure you're getting enough fat and protein for energy.

It's totally normal not to have a loss after a huge loss the first week. Your body needs time to adjust. Patience. The weight will come off. Don't expect more than 1-2 lbs a week. Your macros looks great. Just make sure you hit your fat grams everyday to keep satiated. Even though you don't mention any fat, I assume you are eating it? Nothing wrong with snacking if you need to.

Firstly, I would lower your carb intake a bit a raise your fat percentage. Your macros are not LCHF. They should be closer to something like 65% fat/ 25% protein/10% carbs, or similar. Buy a bottle of olive oil and red wine or apple cider vinegar to make your own. Very inexpensive. And better for you than bottled dressings. You can add whatever herbs and spices you like.

How many calories are you actually eating? What you listed here doesn't sound like a lot. With your height and weight, you should be eating at least your BMR at 2500. If you aren't eating enough, your body eventually will stop losing weight.

You really should be eating more than your BMR. You're barely eating enough for your organs to function eating only 1200. Try 1400 for the next week and see how things go. If that's scares you a bit, try 1300, then go up another 100 each week until you find your sweet spot.
