I take a multi and a Calcium with D. My doctor tests my D levels every year, and they're OK, but both my husband and son are deficient, and they're taking extra strength prescription D. I might take the over the counter D if you live in a northern climate and calcium if you're menopausal and don;t drink dairy.

I thought you were working with $50 per person. $50 is quite low for 4 people, and if you and your spouse's income is so low that that is all you can afford on food, like others on this thread, I'd recommend you look into the SNAP (what is now called food stamps) program, or take advantage of some of the local food…

If the choice is between a potato or a roll, the potato is actually better -- more potassium and vitamins. My husband is diabetic, and he occasionally eats either a baked potato or sweet potato, without much impact on his blood sugar. The major culprit for him is white bread or white rice.

If I go out to lunch or there's an event at work (we had a Christmas potluck yesterday), I just eat a salad for supper. Most of the time, I'm not that hungry at night if I've already max'd out my calories for the day.

My son and I both have OP's reaction when consuming soy-based beverages. I'd look into the substitute. I also eat dairy as part of my plan. As long as you count the calories as part of the goal, there's no problem with dairy; it's a good source of calcium and protein.
